For me, the worst part of making dinner every night is trying to figure out what to make. One thing I like to do to make it easier (and more fun) is create dinner theme nights around some of my favorite things. For example, during the last season of Game of Throne, one of my favorite book series and tv shows, every Sunday I made Game of Thrones themed dinners for my family.
Another book and show I really love is Anne of Green Gables. She is one of my favorite literary characters, so much so I wanted to name my kids Marilla and Gilbert (they are quite relieved I was overruled by my husband on that account).
Well, the 3rd and final season of Netflix’s Anne with an E is premiering January 3rd in the US and the very first thing that came to mind was to make Raspberry Cordial (Anne fans know exactly why, lol).
That said, you don’t have to be an Anne Shirley fan to make this yummy syrup. Cordials are a yummy way to add flavor to just about anything. Some of things I flavor with my Cordial are:
- Vodka or other liquors (in the US and other countries, they consider a Cordial fruit syrup added to a liqueur. I am using the British term Cordial which is just the syrup.)
- Sprite or 7-Up
- Seltzer Water
- Pour directly over Ice Cream
- Mix in to Buttercream or Icing
- Add to a filling or batter to add a fruit flavor to a dessert
Another thing I like to do is I like to pour the Cordial into small bottles (or mix it with Vodka first then add to medium size bottles), then add a pretty ribbon and some instructions, and give them as gifts. They make the perfect gifts when you are running low on funds and time.

Instant Pot Raspberry Cordial

- 24 oz of Frozen Raspberries (you can use other berries or cherries)
- 1 1/2 cup Sugar
- 1 cup Water
- Equipment you will need: heat resistant bowl like a flanera or high sided cake pan, trivet, steamer basket that fits into the bowl and has legs so it doesn’t rest on the bottom of the bowl, and if giving as gifts you need small bottles or mason jars.

-Take the Raspberry packages out of the freezer so they can thaw just a little bit while you set up your Instant Pot.
-In your Instant Pot liner pour 1 cup Water. Insert the Trivet, then the Flanera or pan on the Trivet. Insert the Steamer basket into the pan.
-Next add one package of the Raspberries into the steamer.
-Pour 1 cup of Sugar slowly on top of the Raspberries.
-Add the second package of Raspberries on top so it’s mounded in the center. This will keep them from falling into the Instant Pot.
-Place and Lock the lid on the Instant Pot and turn the vent to Seal. Press the “Manual” button and set the time to 18 mins High Pressure. Once it is done cooking, allow the pressure to Naturally Release for 20 mins. If there is any pressure left after 20 mins you can Quick Release it the rest of the way. If the pressure is done releasing before 20 mins, still allow it to sit for the full 20 mins. This will help let all the juices seep down into the bowl.
-After 20 mins, remove the trivet, container, and steamer.
-Empty the Instant Pot liner of any water and replace. Press the “SAUTE” button and pour the liquid into the liner. Bring to a boil.
-Add the 1/2 cup of Sugar and stir until dissolved (This will take about 4 minutes. You will know when the sugar is dissolved when you don’t feel any granules on the bottom as you stir.)
-Pour the liquid syrup into a measuring bowl or container and place into the fridge to cool.
-Once cooled you can pour into small bottles or a mason jar and keep in the fridge for up to 3 months.
